Ingredients

  • 1 tablespoon extra-virgin olive oil
  • 1 garlic clove, minced
  • 1 cup long-grain white rice
  • ½ teaspoon kosher salt
  • 1 ½ cups water or broth
  • 1 lime, zested and juiced (about 2 tablespoons juice)
  • ½ cup finely chopped fresh cilantro
 

Instructions

  1. Rinse the rice
    Place the rice in a fine-mesh sieve and rinse under cold water until the water runs clear. Set aside.
  2. Cook the aromatics and toast the rice
    Heat the olive oil in a large saucepan over medium-high heat. Add the minced garlic and cook for about 30 seconds, just until fragrant. Stir in the rice and salt, cooking for about 1 minute while stirring to lightly toast the grains.
  3. Simmer
    Pour in the water, bring to a boil, then cover the pot and reduce the heat to low. Let the rice simmer for 10 to 15 minutes, until the liquid is absorbed and the rice is tender. Remove from heat, keep covered, and allow it to steam for an additional 10 minutes.
  4. Finish with flavor
    Add the lime juice, lime zest, and chopped cilantro to the rice. Stir gently to combine, then serve right away.
