This easy cilantro lime rice is better than takeout and comes together in under 30 minutes.
Light, fluffy rice tossed with fresh lime and cilantro makes the perfect side for tacos, burrito bowls, grilled chicken, or simple weeknight dinners.
With just a handful of pantry staples and fresh ingredients, this recipe delivers big, bright flavor with very little effort.
It’s one of those go-to sides you’ll find yourself making again and again—and it tastes even better than the restaurant version.

For Cilantro Lime Rice
- Long-Grain White Rice – this creates light, fluffy rice that doesn’t clump together. Long-grain works best for that classic restaurant-style texture.
- Olive Oil – used to sauté the garlic and lightly toast the rice, adding subtle richness and depth of flavor.
- Garlic – just one clove adds a gentle savory base without overpowering the fresh lime and cilantro.
- Kosher Salt – enhances the flavor of the rice as it cooks and keeps everything well balanced.
- Water or Broth – water keeps the flavor clean and simple, while broth adds a little extra savory depth if you prefer.
- Lime (Zest and Juice) – this is where the bright, fresh flavor comes from. The zest adds aroma, while the juice brings that signature tang.
- Fresh Cilantro – stirred in at the end for a burst of freshness and classic cilantro lime flavor.

Ingredients
- 1 tablespoon extra-virgin olive oil
- 1 garlic clove, minced
- 1 cup long-grain white rice
- ½ teaspoon kosher salt
- 1 ½ cups water or broth
- 1 lime, zested and juiced (about 2 tablespoons juice)
- ½ cup finely chopped fresh cilantro
Instructions
-
Rinse the rice
Place the rice in a fine-mesh sieve and rinse under cold water until the water runs clear. Set aside. -
Cook the aromatics and toast the rice
Heat the olive oil in a large saucepan over medium-high heat. Add the minced garlic and cook for about 30 seconds, just until fragrant. Stir in the rice and salt, cooking for about 1 minute while stirring to lightly toast the grains. -
Simmer
Pour in the water, bring to a boil, then cover the pot and reduce the heat to low. Let the rice simmer for 10 to 15 minutes, until the liquid is absorbed and the rice is tender. Remove from heat, keep covered, and allow it to steam for an additional 10 minutes. -
Finish with flavor
Add the lime juice, lime zest, and chopped cilantro to the rice. Stir gently to combine, then serve right away.

- Can I use broth instead of water?
Yes. Using chicken or vegetable broth will add more flavor to the rice. Water works just fine too if you prefer a cleaner taste. - Do I really need to rinse the rice?
Yes, this step is important. Rinsing removes excess starch and helps keep the rice fluffy instead of sticky. - What type of rice works best?
Long-grain white rice works best for this recipe. Jasmine or basmati will also work, but short-grain rice will be much stickier. - Why did my rice turn out mushy?
This usually happens if there’s too much liquid or if the lid is lifted during cooking. Keep the heat low, don’t peek, and let the rice steam after cooking. - Can I make this rice ahead of time?
Yes. You can cook the rice ahead and store it in the refrigerator. Reheat with a splash of water, then stir in the lime juice and cilantro just before serving for the freshest flavor.
