Ingredients
  • 8 ounces (225 g) dried pasta such as spaghetti, linguine, or any other long or short pasta
  • 4 tablespoons (52 g) unsalted butter, divided
  • 3 cloves garlic, sliced
  • ¼ teaspoon ground black pepper
  • 1 teaspoon salt
  • ½ cup (43 g) grated parmesan
  • ¼ cup chopped fresh parsley
Instructions
  1. Bring a medium saucepot of water to a boil, then salt it well. Add the pasta and cook following the directions on the package. Once done, set aside 1 cup of the cooking water and drain the pasta.
  2. In a skillet over medium heat, melt 2 tablespoons of the butter. Add the sliced garlic and cook just until it becomes fragrant and lightly softened.
  3. Add the drained pasta to the skillet along with some of the reserved pasta water. Use kitchen tongs to toss everything together until the liquid begins to thicken and coat the noodles. Add the remaining butter and continue tossing as it melts. Add more pasta water if needed to achieve a silky sauce.
  4. Remove the pan from the heat. Stir in the parmesan and parsley, mixing thoroughly. Taste and adjust the salt if necessary. Serve right away, with extra parmesan on top if you like.
Notes
  • A typical serving of pasta is 2–3 oz (60–85 g) per person.
  • Salt the boiling water generously—aim for a level of saltiness similar to seawater.
  • You may not need the full cup of reserved pasta water; add gradually to reach the consistency you prefer.

Storing Tips
  • Refrigerate: Keep leftovers in an airtight container for up to 3 days.
  • Reheat: Warm gently in a skillet over low-medium heat with a splash of water to loosen the sauce. The same approach works when reheating in the microwave.
  • Freeze: Freezing isn’t recommended; the texture of the pasta tends to break down once thawed and reheated.

Quick Simple Garlic Butter Pasta

1. Do I really need to save the pasta water?

Absolutely! That starchy liquid is liquid gold. It turns the butter, garlic, and parmesan into a glossy, clingy sauce instead of a sad puddle at the bottom of the pan. You won’t need the whole cup—just splash it in as you go until it looks beautifully saucy.

2. How do I stop the garlic from burning?

Keep the heat on the friendlier side of medium. Garlic goes from “yum!” to “uh-oh…” very quickly. Melt the butter first, add the garlic, and cook it just until it smells amazing. If it starts browning too fast, pull the pan off the heat for a moment—problem solved.

  1. Can I use a different pasta shape?

Of course you can! Spaghetti is the classic here, but literally any pasta in your pantry will work. Long strands soak up the sauce, short shapes grab it in all their little nooks—no wrong answers.

  1. Can I make this dairy-free?

Yep. Use your favorite vegan butter and a dairy-free parmesan (or nutritional yeast if you want a cheesy vibe without the cheese). The pasta water still does the heavy lifting to make the sauce silky, so you won’t lose that magic.

  1. What’s the best way to reheat leftovers?

Low and slow is the trick. Warm it in a skillet with a splash of water to bring the sauce back to life, or microwave in short bursts with a tiny bit of water stirred in. It’ll taste almost as good as the first time—maybe even better if you’re starving.
